One Pot Taco Pasta


  • 13 ounces vegan beef – I used Gardein
  • 1 cup jarred salsa
  • 8 ounces pasta
  • 1 packet of taco seasoning
  • 2 cups vegan cheddar cheese
  • 3 cups water
  • 1/2 cup Fritos for topping ( optional )
  • 1 Jalapeno chopped for topping
  • Chopped cilantro for topping
  • Salt and pepper


  1. Preheat a large deep skillet over medium heat.
  2. Add vegan beef and season with a pinch of salt and pepper.
  3. Stir taco seasoning into ground vegan beef then stir in water, salsa and pasta noodles.
  4. Bring mixture to a boil.
  5. Stir, cover and reduce heat to a simmer.
  6. Cook for about 15 minutes until pasta is tender. (Less time if using gluten-free pastas)
  7. Turn off heat and stir in cheese.
  8. Season with additional salt and pepper if needed.
  9. Serve with optional toppings
